It's Time For Some Good Chicken Wings
Whether you're celebrating summer's last hurrah or the start of football season, here's a fantastic chicken wing recipe
It’s hard to believe that Labor Day — the unofficial end of summer and official seasonal buzzkill — is here already. It seems like only yesterday we were anticipating months of beach days, pool parties, and frizzy hair.
But here we are. The only upside is the promise of cooler weather and (for many of us) football, which brings us to chicken wings.
I am not a golfer by any means, but when I was invited for a lesson at the JW Marriott Miami Turnberry Resort & Spa, I jumped at the chance. Turns out, golf is super fun when you don’t know what you’re doing (golfer friends tell me the frustration comes later).
After a few hours of driving and putting, we worked up an appetite and stopped into Corsair, the restaurant at the resort that looks out onto the golf course. We shared some chicken wings, and they were delicious. Nearly every restaurant offers chicken wings, from the fried kind at sports bars to fancy confit chicken wings served with a dollop of caviar (because caviar on chicken is a thing, whether it be wings or nuggets).
William Gideon, director of culinary at JW Marriott Turnberry Resort & Spa, shared the recipe for the wings. The secret, as always, is in the spices, and Corsair’s spice blend includes paprika and chili powder for a nice, sophisticated heat.

Chicken Wing Finishing Rub
Ingredients
25 chicken wings
1/4 cup paprika
1/4 cup chili powder
2 tbsp salt
1 tbsp onion powder
2 tbsp garlic powder
1 oz. chili flakes
Method
Coat wings in rub.
Using a tabletop fryer, fry until crispy or to the desired crispness.
