Is it okay to make this using NO cheese? We are not cheese eaters, of any kind,

If I were to make this without cheese, I might add fresh basil leaves to the salad instead of tearing and using for garnish. But it think it would be lovely. To make it heartier, maybe a fresh baguette to tear and dip in the olive oil? Come to think of it, let's add the bagette either way!
